Kue Lumpur (Mud Cake)

This is the Indonesian traditional food, but i don't know where  the idea named of this cake "Kue Lumpur" or mud cake. Maybe the texture of this cake same as mud, so smooth....but don't ask the taste...it just great, sweet from the sugar of course, savory from the coconut milk, and sour from the raisins.....
I made this cake with a tiny shape...not for some reason but this is the only mold i had at home ^^



Kue Lumpur (Mud Cake)

75 gr butter
250 ml water
100 gr sugar
salt,as your taste
1 tsp vanilla
6 eggs
450 ml thick santan (coconut milk)
100 gr raisins
1/2 of young coconut, the flesh scraped out in thin slivers ( I OMIT THIS...)

How to:

  1. Melt the butter in the water, add flour and blend till smooth. add sugar, salt, and vanilla. when the batter is well blended, take off the fire and cool down.
  2. Break the eggs one by one into the batter, beating well after each addition. add the santan (coconut milk) little by little and beat until the batter is smooth.
  3. Heat the mud cake molds,oil them and fill them 3/4 full. cover with their heated lids and cook until they are half done.open the lids and scatter a few raisins and coconut slivers on top.
  4. Cover again and continue cooking for about 5 minutes. lift and serve...
